J and Miss C rode all the crazy rides while JM and I looked on! Miss C got her face painted (she LOVES this treat) and JM had his first pony ride and LOVED it! So, in Korea they carry the babies around in carriers everywhere! Usually, they carry them on their backs as well! I researched, got opinions from other mom's and decided on the Beco Baby Carrier! You can carry on front and back...and it goes up until age 4! They had several adorable fabrics...but the only one Jay would "OK" is the one that looks like a cow hide...for when he wears it!!!! It really is precious! In addition, they had a mini in Miss C's size so she can carry her animals around and be just like mommy! We have been holding out, waiting on a size update...but it just might not happen so we went for it! It was LOTS of fun! Our agency let us know earlier that He's got his Passport! Hopefully only a couple of months until we hold him in our arms forever!!!! I had all those months I spent wondering when we would EVER get a referral...now I am scrambling to get it all done! We received word from our agency that we can go ahead and send a picture of us and a card to Jae's Foster Mom!!! J, Miss C and I had never spent Thanksgiving there and we had a wonderful time! We laughed a lot, we ate A LOT, and just truly enjoyed being together and with my folks! I am so so thankful for my wonderful parents and their hospitality and generosity. I am so thankful for my hubby and my precious little girl. I give all of my thanks and praise to my Heavenly Father. Hopefully next year we'll have another little one to be thankful for! I am also soooo thankful that with J's help we were able to get almost all of our Christmas shopping finished and somehow on the plane with us! woo hoo! The weather was amazing and the flowers were fabulous! I had never been to the "Autumn at the Arboretum" (unlike my 5 year old who has been 3 times with g-parents), and I loved it more than the Dallas Bloom's in the Spring!<br /><br /><br /><br /><br />There was hardly anyone there and we just strolled, visited, laughed, ran into some friends, ate lunch (beautiful patio cafe by the way...and great food) and took lots of pics!<br /><br /><br /><br />Hope everyone is having a great week! I am heading to Santa Fe with my mom for a relaxing weekend! One of the neateast peeps I've ever known got her referral last week (from the Dillon waiting families forum)!!! Confusing huh? Well, there is a group of Korea waiting families that participate on a forum (chat roomish) within our agency. Likely, not all the waiting families participate, but many do (especially the closer they get to referral). So, either way you look at it we're getting pretty darn close. Still could be a few months...or a few days. It all depends on the available babies, what we're "open" to as far as medical history, etc. So, it doesn't necessarily go in chronological order...but kind of! I'm such a wealth of confusing knowledge. We'll continue to update with any late breaking news! We spent the weekend in Amarillo at Mrs. S new house (lovely by the way). We drove down to Lubbock on Saturday with our old partners in crime from the college days.....went to some old stomping grounds and just thoroughly enjoyed each other and reminiscing about "the college days."<br /><div></div><br /><div>Miss C wanted to stay with Mrs S. in Amarillo instead of driving down to the game with us (she knows where she'll be spoiled the most)! </div><br /><div></div><div>Last week was "College Week" at Miss C's school and Friday was "wear your favorite college shirt day." Miss C was SOOOOO excited! We met her teacher on Friday (the one we were hoping/praying for) and found that several friends would be in her class! Two girls from FBC preschool and 3 that she instantly bonded with at incoming kinder playgroup! She (and I) were beside ourselves with joy! We feel so blessed and that God is so good.<br /><div><div> </div><div>We got Miss C a Tinkerbell alarm clock for a school gift....and she set it for 6:30am! Believe me, she was raring to go! He resembled Grizzly Adams a bit, but we were still beside ourselves to see him! All 11 guys coming from 4 states, 6 cities, on three different airlines made it within about 10 minutes of each other! That was a big sigh of relief for my dad......he's been working on this trip for over a year!<br /><br />They spent their first night in Augusta, Montana. Jay described it as a "very small, cool town." Augusta basically consisted of 3 bars and four churches and the people there said two things:<br /><br /><br />*they are an equal opportunity town<br />*they are a drinking town with an agricultural problem<br /><br /><br />I guess that wouldn't be our first choice of places to live in Montana if we ever move there!<br /><br /><br />The next day was the big ride. Jay said he was making fun of John (Brother in law) who is known for sleeping in (not a morning person) about having to get up for a 4:45am breakfast.....needless to say my dad had to shake <strong>Jay</strong> 3 times to make sure he was alive and then<strong> Jay</strong> almost missed breakfast (I"m sure John got a big laugh)! There is a first time for everything!<br /><br /><br />It was 25 miles on horseback into the Bob Marshall Wilderness (Federal Forest Reserve). Jay said it took 9 1/2 hours and it was tough, but the most beautiful place he's ever been or seen! His horse was named Tracker and he said he was a good one! After the looong ride/day they made it to camp, ate dinner...and Jay said he turned down apple pie for the first time in his life and went straight to bed after his last bite of dinner!!!!!! He had lots of firsts on this trip!<br /><br /><br />They spent the next 6 days, fly fishing, hiking, riding, eating like royalty, fly fishing, and did I say fly fishing? One day they rode to the Chinese Wall (a natural formation named because of it's likeness to the real thing)! Jay said "The view from the top would make anyone speechless."<br /><br /><br />They all continued to catch cut-throat trout throughout the trip. Jay said John looked like an Orvis Catalog, but he also caught the most fish!!!! They hiked a ways down the river together and caught 25-30 fish that day!!!!<br /><br /><br />The next day they rode a few hours to the South Fork of the Flathead River.....they continued to catch the fishies....Jay said he, dad and John had a great lunch together just sitting on the river bank and enjoyed the view. He said that Amy (the wife of the owner) made amazing food for every meal. He was amazed at what they had in the wilderness....he felt like a King! They all continued to have a wonderful trip together. They saw many animals, played some Texas Hold 'em, ate and fished more, etc.<br /><br /><br />Then came the day to ride out...another 9 1/2 hours on horseback. Jay said it was just as beautiful as the ride it and totally different!<br /><br /><br />My three favorite quotes from Jay about his trip:<br /><br /><br />*"This is most definitely God's Country"<br />*"It has been great not thinking about work and enjoying this once in a lifetime (hopefully more for me) trip."<br />*"Apparently I kept a few people up by being loud" (this during the Texas Hold 'em game)<br /><br /><br />We feel so blessed that Jay was able to have this experience (thanks, Popa). We are so thankful that they all came back in one piece. We shopped a lot, ate a lot and just had lots of fun! Miss C and Miss J always LOVE seeing each other and spending as much QT together as possible (now that they live in Charlotte). We went to the Painted Dish and all made our own little creation. We went to the Santa Fe swimming pool and had a picnic and great time before the daily afternoon showers (it's Monsoon season there). We were able to see The Little Mermaid at the Santa Fe Children's Theater. It was precious and we all just enjoyed it thoroughly! We went to the girls favorite place for dinner one night....La Casa Sena Cantina-they have delightful cuisine for the big girls and the wait staff sings Broadway tunes throughout the evening...always loads of fun! We went the Farmer's Market, a Gallery Showing of one of my folks longtime friends, and enjoyed many a sunset! He'll ride 25 miles in on horseback, fly fish for 6 days, and then ride out! We're meeting my mom, sister and niece (all the guys are going to Montana). Sorry it's been so long since I've posted. J and I just returned from Paradise. We went to Playa Paraiso, Mexico to celebrate our 10th Anniversary!!!! It's actually a few months early, but our Anniv is in the midst of hurricane season in the Caribbean! Some families in the Korea program with our agency have received referrals lately and they have waited 5-6 months! So, there is a great chance that maybe we will see our sweet child's face sometime late fall! Then we'd travel in early 2009! We met some real neat folks from around the country. Two other couples were adopting from S. Korea, two from India, and one from China. The staff is absolutely amazing and we just had a great experience. We feel <span class="blsp-spelling-error" id="SPELLING_ERROR_1">soooo</span> blessed that God has led us to Dillon and S. Korea!<br /><br />Jay decided to just go for it and make it a "Date" weekend! We stayed at a B&amp;B that is a <span class="blsp-spelling-error" id="SPELLING_ERROR_2">Historic</span> Mansion. The wife is a former chef from France. When we arrived we had hot tea and fresh strawberry pie waiting! The place was fantastic! We strolled through <span class="blsp-spelling-error" id="SPELLING_ERROR_3">Utica</span> Square (Tulsa's HP Village), shopped and ate dinner....alone!!!! Then she made us the most amazing breakfast (I had a crepe...<span class="blsp-spelling-error" id="SPELLING_ERROR_4">mmmm</span>) and served us in our room!<br /><br />We're just waiting to hear from Dillon that our Home Study is approved and we are official! We were ALL starving!!! But, it went fabulous! We thought so anyway! We liked her a lot last week, but really enjoyed our time with her and the information we learned today even more! <br /><br />She had Miss C sign a "Big Sister" contract and interviewed her first. I think Miss C told her everything down to my underwear size! But hey, you know going into to this process that you have to be totally transparent, so why not with sizes as well! ha!<br /><br />She interviewed me individually for about an hour, J for about an hour and then wrapped up with us together at the end. We feel really confident about this process and that God does have a child planned for us! Hopefully sooner than later.....and we are trying to be as patient as possible!<br /><br />She completed a "Safety Check" of our house as well, and we need to get one more fire extinguisher and put a lock on the medicine cabinet (it's up high so we hadn't put a lock on it). Other than those two minor items our house was fine!<br /><br />She said it will take her 2-4 weeks to get it all written up and to Dillon (our agency) and then another 2-4 weeks to go through all the different approvals. Then we will be officially waiting for our addition!!!!<br /><br />Please continue to pray for our process. <br /><br />*Pray that there are no hold ups in her writing up the HS.<br />*Pray that there are no glitches or hold ups as far as all the agency approvals.<br />*Pray for our hearts to be prepared for the wait (short or long).<br />*Pray the we know that it is our child without a doubt when they call with a referral. It actually went very well (J and I thought so anyway). Our social worker (SW) was very sweet, informative, and easy to talk to. She explained a bit more of the Korea process to us and just put us at ease (as much as you can have with International Adoption). We pretty much just told her our life stories, talked about marriage, talked about issues that adoptive parents face and especially issues that adoptive children face. We talked about what support systems and resources we have, how we are going to incorporate Korean culture and heritage into our family, and how we'll handle issues/situations as they arise in the future! I won't bore you with all the details, but we feel that it went great. Neither of us were nervous or anxious and we thank you all for the prayers!<br /><div><br />She went ahead and scheduled our next and last interviews for next Wednesday at 9:15am. She will conduct another joint interview and then interview us each separately, and then interview C (should be fun)! It will likely take 60-90 days to complete and get to Korea! Then we officially wait!<br /><br />The wait is a max of 12 months from the time your Home Study hits Korea until you are referred a child! Then another 3-6 months until travel. Korea actually has an escorting program (they'll escort your child here to you), but we REALLY want to go and see where our little one was born and meet the wonderful foster parents that devoted there lives to the first few months of our <span class="blsp-spelling-error" id="SPELLING_ERROR_1">childs</span> life!<br /><br />On another note...what a beautiful day today! We went to the "Castle Park" as Miss C calls it with some friends today and had lunch and lots of fun! Then for some reason (she has a delightful imagination) we came home, put on her swimsuit, made an "Olympic" obstacle course in our driveway.....and she went through it on her scooter! GREAT FUN! I'll try and post the pics soon on that one!<br /><br />Hope everyone is having a fabulous week!<div class="blogger-post-footer"><img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/3302678801953569470-5457190581046785376?l=cantwaitforkorea.blogspot.com' alt='' /></div>the jordan'shttp://www.blogger.com/profile/10478055874316904052noreply@blogger.com6tag:blogger.com,1999:blog-3302678801953569470.post-63641430352988567932008-03-19T10:23:00.006-05:002008-03-19T10:36:56.473-05:00<strong>Velvet Chicken with Mushroom Wine Sauce</strong><br /><strong></strong><br />2 cans cream of mushroom soup (I use the heart-healthy ones)<br />1 1/2 cups milk<br />1 cup white wine (or white cooking wine)<br />1 cup uncooked converted rice<br />1 pkg Lipton dry onion soup mix<br />fresh sliced mushrooms (amount desired)<br />6 boneless, skinless chicken breasts<br />salt and pepper to taste<br />grated parmesan cheese<br /><br />In a large bowl, mix the cream of mushroom soup, milk, wine, rice and onion soup mix and mushrooms (optional-we just like them a lot). Place the chicken breasts in the bottom of crockpot (optional-place one pat of butter on each breast). Pour the soup mixture over chicken and season with salt and pepper (I use a bit of garlic as well). Sprinkle small bag (6oz) of grated parmesan over top. Cook on low for 8-10 hours or high for 4-6. We're VERY new at this (other than reading other peeps blogs), so bear with us while we work out the kinks!<br /><br />Well as many of you know we started out last year (March 5, 2007) on our journey to adopt from China. As you've probably heard....China has really slowed down and exponentially extended our wait to to bring home baby! So, after much prayer and consideration, we have decided to go ahead with a concurrent adoption in KOREA! We couldn't be more excited! We are very hopeful that this process will be much more expeditious, but only time will tell! We are not closing the door in China either. We both feel that right now there is still a piece of our hearts there as well!<br /><br />We have already been approved with our agency for Korea and will start a new Home Study any day now! We do have to start all over. Our first agency is a China-Only agency and Korea works with very few agencies, so looooong story short....here we go again!
